Well the 'best' graphics card would be a 4gb 5970 but a better question would be what is the best graphics card for your situation.

The best graphics card is this http://www.newegg.com/Product/Product.aspx?Item=N82E16814150500&Tpk=4gb 5970 though I vaguely recall seeing one with twelve displayports.

Of course, you could always do four single GPU cards to beat the 5970 4GB. The best possible setup (framerate-wise) would be four GTX 480s, though I think ATI has them beat in awesomeness ( http://www.youtube.com/watch?v=N6Vf8R_gOec ) Completely impractical, but awesome nonetheless.
