Ipod Restore and Update

Hi i have a second gen i pod and i want to restore and update it. I have apps and lots of music on it. whats the best way to back it up so i dont loose anything on in basicaly the exact same ipod with just newer firmware
also its jailbroken and i will be rejailbreaking it in newer firmware.

Dont do anything yet, wait for the new jailbreak for 3.1.
