Default Approach to User Interactivity

Lately, I've seen some interesting ways of delivering flashy and interactive content. On many websites, the approach they use to attract visitors is really sophisticated and complex: like Gmail, Fox, ABC, etc. So I am wondering which way of delivery is the most widely used and the reason behind it. Which method would you adopt to construct a website which delivers interactive and "desktop-like" content to your visitors and why?
