after work experience i have actually grown to like macs video and audio editing its very gd but very very expensive

OpenBSD and Debian.

their not perfect yet though, obsd's software management could do with being a little bit more advanced, and debian would be nicer if one of the non-linux kernel ports were finished.

Windows 2000 pro all da way. I used XP Home briefly. I had to walk away from the computer, its like windows without administrative privilages. I've heard some good things about XP Pro but not thinking about upgrading just yet.

XP Professional is worth it - it is like a Graphically enhanced Windows 2000. And its updated more for other things.

boot times being important i always found curious.

they dont really matter, if you never reboot
