Default Backup Software for server

I have a rack server that is used for data storage running Windows Server 2008 Enterprise Ed. I recently was given another rack server that I want to use to just backup my data to but wanted to run CentOS on it to familiarize myself with it.

I have not done any research figured I'd get opinions on a good software to use between the two or what the best way to get it done would be.

Think you can use Paragon disk manager. I know you can use this on desktop hard drives. If you are unable to use this with a rack server you might be able to get a similar program from Paragon that does the same but for servers.
