I don't think it would be very good at all. It would quickly heat up plus if you take pieces out they'll be super sticky.

I wonder if adding a filter pump to the rig if that would keep the oil cool by circulating it around.

Maybe, but the oil may be to thick.

my friend use vegtable oil over the heatsink and cooked fries with it lol i should find some pic to show you guys.

There's no real benefit of it as mineral oil costs a bunch I think I heard, and it doesn't keep it cool anyway. It's just cool to say, "I have a submerged computer." That's about the use of it...
