Default Question-"Spoof your headers"

Hey everyone, it's nice to join this forum. I just had a quick question in regards to some alien terminology. I just received a disturbing email from someone who illegally tracked me down, saying I should "spoof my headers" when sending out emails if I wanted my identity to be secure. Does anyone have any insights into this? Very much thanks to those who reply.
