Right now I have x2 nVidia 8600GT's 256MB on SLI settings. But it runs a little laggy on some games with my res set at 1680x1050.

I'm getting a real good deal on a...
Asus Nvidia Geforce 8800GTS HDCP 640MB 8800 GTS PCI-E

Will I notice a difference on 1 of these compared to my x2 8600's? And will this video card run 1680x1050 res with no problem?

You should yes. The big problem with your old setup running that resolution was the amount of RAM on your video cards. The 8800 should have no problem doing that resolution.

I definently agree with what was stated above ^^ you'll like the 8800gts for higher resolutions. just make sure you get the 640 and not the 320mb one.

the 8600GT is a joke that is not worthy of the x600 title. It is an utter waste of existence compared to the 7600GT. 8800GTS is awesome, my friend has one, they haul.
