I've widdled my choices down to these two gaming rigs, which vary in price and components. For each price given against the hardware, which is a better buy overall?

Ignore Norton, that's coming off. The Power Supply will also be upped to meet the needs of each individual system.
All in all, which is a better purchase? Is the difference in processors what effects the price so greatly?
 
In my opinion you have pretty close to two alike systems. Intel is normally a little more expensive but in my experience only because it's a brand name and more people are familiar with Intel specs.

It were me I would go with the one with more RAM and less cost
