XP and Win 10 are both equally easy to use but XP is rather dated. To each their own.

Plus it's better to stick with an OS like Windows 10 that receives updates and security patches and that also supported by major software makes like Google, Mozilla etc as they no longer support or update their browsers on XP.

Personal preference shouldn't really come into it when we're talking about Operating Systems that old. You'll start to run into some serious security issues etc running on obsolete software like that

Paper and pencil is even easier I would do away with the computer and just use those.

Windows 7 is easy to use and is still supported for the next 4 years. And it's not a giant data mining experiment.
