Not really your looking at the same thing... I could understand if he wanted to teach clients in a different room or where there not all crowding around his computer, but if thats the case why not just get a projector. Projectors would be the easiest way to set it up.
p.s. what other reasons could there be?

Dual 7800gt's running creates the ability to run 4 displays off one video card.
