According to nvidia's site, it needs min. of 500 watts.

Yes, Defitanly. One 260 would be no problem. I would suggest the Core 216 260, It's cheaper then the regular 260 and extremely close to the same performance.

Yes, my setup is: antec 902, i7 920, mobo? not sure probably P6T, ocz 700w modular, optical drive, WD caviar black 640 gigs

yea it is even really close to performance with the gtx 280. IF you overclock it a little more than it already is, you can get more power than (last gen) highest end card
