Go into Add or Remove programs, scroll down to Nvidia Drivers. Left click on it and click Change/Remove. In the next window, select Remove all Nvidia Drivers including Display if using the onboard video, or select Remove all Nvidia Drivers, except Display if using an add in video card. Then click Remove.

If you have a video card and are not using the onboard video, you will want to select "Remove all Nvidia Drivers, except Display". That will remove all motherboard related drivers and leave the video card drivers in place.
