Most nvidia cards (and maybe newer ATi, I don't know for sure as I don't use ATi) offer extended desktop with dual monitors 2048 x 768 would be easy, any larger and you'll require another graphics card to extend to three monitors.
If the native resolution of your two 17" LCDs is 1024x768 you're not going to get better than 2048x768.
