Try Nero 7 Ultra it has a great backup util and I believe Windows XP has it's own backup solution, Start - all programs - accessories - system tools then run backup. There are other methods, but these should do for what you've described.

AMD Athlon 64 X2 Dual Core 4200+
DFI LanParty UT RDX200CF-DR Crossfire Motherboard
OCZ 4GB (4 x 1GB) PC3200 Dual Channel Platinum Series CAS2
ATI Radeon X1950Pro - Crossfire Edition - 512MB GDDR3 x2 cards installed.

She might not be able to put everything on discs, depending on what she has on her pc. Could be better off buying a small external HDD. Or evan an internal one?
