I'm also considering an i7 2600K because I can get it on Ebay for a lot less than an i5 4670K

Their isn't much difference in performance between the two CPU's Intel Core i5 4670K vs 3570K. As for a GPU something like a 760 GIGABYTE GV-N760WF2OC-2GD G-SYNC Support GeForce GTX 760 2GB 256-Bit GDDR5 PCI Express 3.0 HDCP Ready Video Card - Newegg.com

I also found a 4690K for a good price. I thought about a 760 but I can get the same thing (a 670) for a lesser price

My question really is, what GPU will I spend the least on yet keep me gaming for a couple years?

The 760 is on special at the moment but what about the R9 280X SAPPHIRE 100363-4L Radeon R9 280X 3GB 384-Bit GDDR5 PCI Express 3.0 CrossFireX Support Video Card Tri-X OC version - Newegg.com..

Oh yeah good point. So you don't want to spend a bit extra on a new PSU?
