Will a intel® Core™2 Duo mobile processor T6400 play assassins creed? I know all the other specs are on but with some processors coming out after the game I am not sure....

It should handle it just fine. It will be more dependent on which graphics chipset your laptop is using.

358MB of shared video Intel® High Definition audio; HDMI connector which you would think would handle it. Do you think that I would have to put the setting for the game on low to run it with the processor? oops it a Intel® Graphics Media Accelerator 4500MHD

Intel® Graphics Media Accelerator 4500MHD is all that I know, I haven't baught it yet....planning on buying it next week...

Graphics chipset. The Intel 4500MHD is good for most day to day operations and HD video. Gaming is it's major weakness.
