For about the price of the pair of 640s, you could get something like this:
SAPPHIRE 100355-1GOCL Radeon HD 7850 1GB 256-bit GDDR5 PCI Express 3.0 x16 HDCP Ready CrossFireX Support Video Card OC Version - Newegg.com

Granted it has a smaller frame buffer (1GB as opposed to 2GB), it wouldn't make any difference unless you were gaming across multiple monitors at huge resolutions, something like 3840x2160.
Thank you for your opinion, I just found out that I can use Student Card to make it cost only like 1300€ Without changing anything, maybe better GPU
(Homepage | ISIC - International Student Identity Card - ISIC.org)

And one next hing, is GTX660Ti good for my rig? Or should I go higher?

Unless your powering an (array of big screens) SLI would be a waste of money, a GTX660Ti would do just fine.

ASUS GeForce GTX 660TI Direct CU II 2048MB GDDR5 PCI-Express Graphics Card

660Ti will power 2 monitors with standard DVI cables.

Good luck with your build

But, what is better? Two MSI GT640's or one 660Ti?

(If you don't look at money)

Because you have 2 Monitors and the GTX 660Ti will sync them perfect also you will be able to play about any game out atm.

There can be probs with SLI (and Crossfire) Dual GPUs are only needed for BIG resolutions ... Today 1 GPU is good for dual displays.
