2 HD's and 2 OS's

When you have 2 HD's with a different OS on each HD and when booting up, how does one chose which operating system you want to boot up? I know on a duel boot the screen comes up and ones has a few seconds to chose the option. Is it the same or how does it differ?

it's a dual boot, whether on two different hdds or two partitions on one hdd...
