Video Card and Cable Questions for Experts!

I have two 8800 gts video cards in my computer atm. I have dual monitor's hooked up to each of the cards coming out of the DVI Port.( One Monitor per video card atm)

I have been getting into watching online game tournaments so this was my plan.

I was going to hook up a DVI to HDMI converter into one of my DVI ports on the video card and then run an HDMI cable to my home TV so I could watch these games on the TV. Would I be able to use this TV as a "3rd" monitor and just disable it on my PC when I'm not using it? Also I have an S-Video Port on my Video Card and also on my tv. Would the picture be any good on a S-video cable? I also have an S-video to component, would that increase the picture at all? I'm leaning towards DVI-HDMI, it's a little more expensive but I think it would give it the best picture over all. What are your thoughts on all of this and is a 3rd monitor possible with my set up?
