For a dell dimension 3000 chipset, what is the maximum amount of memory this board can handle? Also, what memory is compatible with this chipset? I appreciate the help.

Is this true then, I can put in 1gb 184-pin Dimm DDR PC2700 OR DDR PC3200 in each slot ?

Correct. You can use 1GB DDR 333 or DDR400 memory modules in each slot for a total of 2GB.
