Could someone enlighten me as to what upgraded drivers would actually do to your devices?

Most devices are designed to use drivers, some are not. They were invented so that changes in how the device is to work can be made throughout the life of the device. Those changes can be due to improvements in how well the device does its job, and sometimes changes made to the OS forces changes in how the device must react. When the device starts, it fetches some are all of the drivers.

You can also take a look at the driver update page, which will show you in detail, all of the improvements claimed for that driver version.
