ATX 500W PSU

well... i'll say it depends on the quality on your PSU.
just becouse the PSU says it can handle 500W, it's not always the case.
the reason you buy more watt then you need is that the PSU will be more abused, warmer and louder the more watt in % it uses.
Let's say that if you take a system that uses 450W and give it a 500W PSU, it would be using 90% of it's power.
most likely that PSU will sooner or later fail and it might take hardware with it to death. you might be fine with 500W if it's a good build.
what brand is it? if it's an unknown brand then i would advice against it.

IF, your PSU is of excellent quality, and IF you do not intend to overclock either the CPU, or the GPU, and IF you never intend to by a second 560 for SLI, then yes, you can get away with it.

Nvidia, bare bones minimum requirement for the GTX 560 is a 450 watt PSU.

GeForce GTX 560 | Specifications | GeForce

Personally I wouldn't consider anything less that a high quality 600 watt supply.
