couldn't I just buy a 750 and Overcclock it just 1 ghz higher? I save about 20$ like that.

Yea, on some games Crossfire actually LOWERS fps.

For games like that couldn't I just remove the Xfire bridge and Use just the single card?

how powerful Is the 6870 anyway?

You don't have to remove the bridge, because it will still play the games, but not as two GPU's connected, just one. And the 6870 can run pretty much anything you throw at it at max settings.
