If it were me, id go for the intel build, but have the gpu's from the amd build, veerryyy good build.

Nice. But the Intel motherboard you've linked will only work with LGA1366 Xeon 5500 and 5600 series CPU's. And they are very expensive. Also you need double the RAM sticks, un-buffered(if overclocking) or registered ECC(for workstation tasks) sticks.

What are you going to do on these machines?

I'd wait a bit. AMD and Nvidia are both about to release some bad-arse GPU's that will top the ones you've got there.
