I don't play intense games alot, although I'd like it to be able to handle pretty much anything out there. Mainly heavy web design, everyday tasks, alot of media storage/playback. My budget is sort of out there, I can go as high as I want but I'd rather not go over $1500, I don't need a monitor/speakers/keyboard/mouse. This is just a first glance of what I'm heading towards, and hoping you guys can give some feedback, thanks.

Bringing the overall price to about $1,337, heh, ironic. Anywhence, as I said this is all subject to change based on your feedback, I'm in no rush to buy these parts just yet, although it will be within the month after I've fully decided on what I'm going to get. Thanks for any and all help you can provide.

I was concerned about the video card, everyone kept telling me nVidia hence my choice, though now I'll look at ati more. So the triple channel means its better to use 3 slots rather than 2?

Now my primary concern is, for the sake of upgradability, would I be better off buying a single 5850, or two lower end cards and running them in crossfire?
If I had a 5850 and wanted to upgrade, I would simply buy another 5850, however if I had two 4xxx cards, I would have to buy two more of them to upgrade? So going for a single 5850 as you suggested is optimal?

Four cards scale like crap right now, and there are not very many mobos that support it. Get a single 5850.

You can also flash it to 5870 BIOS to get a performance boost.
