I just turned my Xbox 360 on for the first time in ages, and got a warning saying I would have to update, or I'd be signed out of Xbox Live.

I said to update...

Its now frozen on the screen saying ' Update In Progress', and isn't doing anything, and the cancel update button doesn't work (B), and yet it says to not turn off or unplug the console...mm...

I did do just now haha, its updated fine this time. I thought I would have bricked it!

lol no, there is also ways to revert a 360 back to its original settings, kinda like a system restore, i think you hold like RT and A or something at the start up and it clears it. You'd have to look on Microsoft to be sure lol
