i was wondering whats the gaming performance difference between an 8MB cache, 16MB cache, and 32MB cache.

Nil. The a cache is a temporary storage area where frequently accessed data can be stored for rapid access

The HDD cache doesn't affect gaming performance as much as it's does seek times for frequently used apps and files.
 
If you are looking for good gaming performance in a pc, focus more on the video card. More HDD cache is good for running apps and stuff other than gaming, like the rooster said.
