Generally the motherboard will set the voltage according to the SPD on the memory module. But if it doesn't, it's easy enough to enter the BIOS and set the correct values.
Since you'll be doing some overclocking, I would suggest the CORSAIR XMS2 2GB (2 x 1GB) 240-Pin DDR2 SDRAM DDR2 800. It's good stuff and can handle overclocking well.
