In a nutshell, serial consists of a single bit-stream of data, parallel features multiple single bit-streams running concurrently.
The difference between SATA and PATA is another matter though. SATA is faster than the older IDE parallel method, because despite the fact that it also employs a single data stream, technology advances have increased the overall transmission speed to the point where it can outperform traditional IDE.
