i know i've had this conversation before, but I need a straight answer.

Gigabyte Motherboard GA-8S648FXP-RZ

Max Ram (Listed) = 2GB DDR400, or 3GB DDR333.

i'm guessing that if u put in 3GB of DDR400, it will slow it down to 333 automatically.

If this occurs (that should be the result i think), can i go into BIOS and clock it back up to 400 again?
 
Somethign tells me that it either A) won't boot up with three gigs of DDR400 or it will only see/use two gigs.

If it does down clock it to three gigs, the odds of you being able to raise it back up to 400 seem slim.
