Well, how much better is the x800 over the 6600GT (see links in my above post) for gaming?
 
Its a bit better. The X700 is about the same as the 6600GT in spec, so the x800 is probably about as good as the 6800
 
The 6800 def.
I'm going off ATI, plus Geforce has a few more advantages, for example real Direct-x9 c support.
 
Check out this setup. I want to up the processor to the 3800+ but I don't know if I should get the venice or newcastle core.

What sound card are you getting?
What OS will you be using, and do you need to buy it?
How are you getting the hard drive so cheap? :p

Possibly look into upgrading your RAM to Corsair XMS.
Look into the 6800GT video card.

Other than that, sweet.
